I continued my weekend of Caesars on Saturday after picking up some hiking gear for the fall camping season. By early afternoon I felt like stopping in for a drink somewhere and found myself in front of Clark & Co. – a new establishment in the space that was formerly home to the Clay Pigeon.
There were a few people at the bar, and I found a table by the ample windows. I’ve followed the place for a little while on Instagram, but hadn’t had a chance to check it out yet. The woman behind the bar was really friendly and I ordered some oysters and olives with my favourite cocktail.
The Clark & Co. cocktail came in a nice little glass goblet with a piece of fried chicken skin as garnish. I was excited to taste a garnish I hadn't tried before. The skin was the right amount of greasy and salty with a nice crunch to it. There was also a juicy bean in the drink. The texture, flavour and juiciness of pickled beans is probably worth a blog post in itself – I’ll put that on the to-do list.

The drink itself was standard and tasty, with Tabasco flavour at the fore. As I write this and check the photos I took, I’m noticing it looks like there was horseradish in the drink, which is something I love, but I don’t remember the horseradish. I’m thinking it might have been seasoning from the chicken skin. The oysters were good and the serving of smoked olives was very generous for one person.
All-in-all it was a nice pit stop on a day of errands.
