It's been almost a year since my last post, but you know, when you start cultivating the simple life of an aging shut-in you don't go out for Caesars as much. But I'm ready to have fun again! Please say you'll take me back.
Baby Steps. I'm starting with a Caesar at home. If I'm honest, I started with a few home Caesars in September when brother A and his girlfriend, C had brunch at my house during a certain annual music festival. The following recipe is easy to throw together on lazy weekends.
Beyond the usual Caesar recipe I add three main things to improve the flavour. I dump in a splash of pickle juice, a big spoon of horseradish and a few healthy shakes of Old Bay Seasoning. i learned about Old Bay when I was heading to Chicago last year and was reading up on Bloody Mary recipes. Many mentioned the seafood seasoning, so I decided to try it and I'm sold. It has a perfect je ne sais quoi that really adds dimension to the flavour. I think it brings out the clam - in a good way.
I also like to add a sprinkle of smoked paprika to the rim salt, especially when I'm mixing with tequila. It gives it a nice smoky aroma - or an overpowering smokiness if you dump in too much - so be conservative with it.
INGREDIENTS
METHOD The rim:
In a Mason jar:

- 7 splashes of Worcestershire
- 7 splashes of Frank's hot sauce (this is a fairly mild drink)
- Shake in some Old Bay, then add a bit more because you probably didn't get enough in there.
- Splash in some pickle juice - maybe a shot's worth
- Squeeze in a wedge of lime (this is a two wedge drink with the garnish)
- Double shot of tequila
- Three ice cubes
- Clamato
GARNISH
- pickle and three olives on a bamboo spear
- wedge of lime
Best enjoyed with hungover house guests.
